Hi Moms

Don't worry, I am super cognizant of the fact that I am a total hypocrite, so I apologize in advance if I have ever made fun of your theme party. On Friday I was talking to the other Americans at my work and we realized that we were on the precipice of thousands of hours of free time. I realize that that is about as annoying as blogging, "Little Jimmy has straight As again and is skipping five grades," but it is just the reality of the situation. We are having a Gone With the Wind party tomorrow and I was wondering if anyone had good recipes for sweet potatoes/yams. This isn't turning into that kind of blog- I just need to use the resources that are available to me. If you know me in real life, e-mail me.

Thanks

  1. I do fajita sweet potatoes. If you have a spice blend that you like, use it. I peel and cube the potatoes, toss them in olive oil and spice/herb blend, then bake for about 30 minutes at 400*. I use about three large Red Garnet Yams (best flavor) in a 9x13 pan.

For fajita seasoning, I roughly follow a recipe like: http://www.food.com/recipe/fajita-seasoning-mix-28011 and leave out the cornstarch and bouillon. It takes about 2 Tablespoons of seasoning for a 9x13 pan of sweet potatoes.

**sidenote, I can never get the comment posting to work in IE, so you've probably never seen me here before. I think. (I linked in from fMh and like your stories. Hi.)

  2. Thanks for reading! Everyone complains about the comments, but I don't know how to fix it. I will try the recipe and let you know. I like the idea of a latin flair to it.
